-rice (I cook mine in chicken broth for more flavor)
-pulled chicken
-roasted sweet potatoes (peel, cube, toss in olive oil and coarse salt… cook at 400 for 20 min, flip and cook for 20 min more)
-Kalamata olives
-tzatziki sauce (full fat Greek yogurt + dill)
-feta cheese
-chickpeas
-tomato, sliced cucumber and avocado
-shredded lettuce
Line up and have your family build their own bowls… that’s it!
-4 cups cooked chicken breasts (bring to a boil, place chicken in pot, cover and simmer on low for 25 min, drain)
-1 1/2 cup mayo (we like Duke’s)
-1/2 cup lemon juice
-3 Tbl dried parsley
-Chopped apples - a lot!
-Salt and pepper to taste
Cook chicken as described, place in stand mixer. Mix at low speed and add all ingredients until mixed well. You may need more mayo or lemon juice, depending on your preference or how much the chicken absorbs. Enjoy!

2 cups all-purpose flour
1 Tbl sugar
1 Tbl baking powder
1/4 tsp salt
1 3/4 c buttermilk (I use regular)
2 eggs
1/2 tsp vanilla — I use 1 tsp plus some overflow
1/2 cup melted butter (unsalted)
Mix all well and cook waffles on waffle iron… this makes 8 waffles on our iron.
I freeze the leftovers, which is a big help.
2 tsp olive oil
1/4 cup sweet onion, diced
1 medium red bell pepper, coarsely chopped
2 large carrots, diced
1 small sweet potato, diced
1 Tbl chili powder
2 tsp cumin
1 tsp dried oregano
1 tsp paprika
1/2 tsp salt
2 cooked chicken breasts (I boil and simmer mine, but a pulled rotisserie chicken would work... maybe 3 cups of meat)
2 cans navy beans, drained
Heat oil in Dutch oven and cook vegetables until tender. Remove red pepper and use an immersion blender to blend it with 1 cup chicken broth. Add this back to the vegetables, then add 3 more cups of broth and stir in the spices. Bring to a slow boil, then simmer for 20 minutes or until vegetables are tender. Stir shredded chicken and beans into the pot and heat until all is even. Serve with cornbread or good crusty bread.
¼ cup honey or maple syrup
2 Tbl butter, melted
1 tsp vanilla
1 ½ cups rolled oats
½ cup flour
½ cup pecan pieces
¼ tsp salt
Set oven to 350. Mix dry ingredients together in a large bowl. Mix honey, butter and vanilla together in a small bowl and pour over dry ingredients. Mix evenly.
Pour onto a parchment paper lined baking sheet (sprayed with cooking spray) in a single layer. Bake for 20 minutes, tossing once after 10 minutes. Cool and enjoy!
